Jess’s Famous Pico de Gallo

This recipe is super simple and for those of you who find chopping vegetables therapeutic (like me) YOU are in for a treat!

You will need:

4 Roma Tomatoes, small diced
1 Green Bell Pepper, small diced
1/2 Large Sweet Onion, small diced
1/2 Jalepeno, finely minced
3 Cloves Garlic, minced
1 small bunch of Cilantro (to taste)
Juice of 2 Limes
Juice of 1 1/2 Lemon, squeeze the other half in your water and drink while prepping
1 tsp pepper
1/2 tsp salt (to taste)
1 c small diced pineapple (optional) – so good when served on top of fish tacos


1. Dice onions, place in large prep bowl and top with lemon juice. Let sit while prepping other veggies
2. Dice tomatoes, green bell pepper, jalapeno and garlic. Add to prep bowl and stir
3. Roughly chop cilantro and add to bowl
4. Squeeze in lime juice and season with salt and pepper
5. Stir and let sit for at least 20 minutes
